Joseph in Technicolor!

We have some of the most awesome friends ever! When I was out VTing at the beginning of this month and Faith told me that Katie was going to be in the Enderlin Production of Joseph, I knew we had to make it out there. We love to adopt ourselves into the Lueck family anyway we can. They are awesome! They spoil us when we go out (not that that this the reason we go but it sure makes us feel special)!
We went out a bit early to eat dinner. Micki is a fabulous cook and the food was excellent. We totally made pigs of ourselves but it really was soooo good! She made us ribs, the best potato salad ever, fruit pizza, baked beans, chips, and the BIGGEST hotdogs you have ever seen in your life!!! Our kids love the big hill and playing with Katie & Ellie (and now they love to hold baby Scout)! Brett and I love visiting with Micki, Faith and Steve. (We missed Chet cuz he was out of town) They are so easy to laugh & visit with. Thanks so much for dinner, Micki! Yummmy!
Enderlin is such a cute little community where everyone knows everyone. [It's about 50 minutes SW of our home] They did a fabulous job at the production of Joseph and the Technicolor Dreamcoat. The set was awesome, costumes were amazing and they sounded great! A perfect performance for our kids to experience Joseph for the first time. Way to go, Katie! You did an awesome job!
Remember the spoiling part??? Well after the play, we walked to the local Ice Cream Shop where Micki treated us to dessert. So yummy! It was a bit chilly cuz the wonderful ND breeze picked up but it was delicious!

Sending Elder Rigg Home

Fargo Misssionaries are the Best!!! These last set of Elders have been really great! Fortunately for them and their families but unfortunately for us- 2 years go fast! Elder Rigg goes home to Idaho tomorrow. Since all 3 of his last days were filled with dinner appointments with other people, we took advantage of Brett's day off and took them out for a mid-afternoon treat! To you both...Thanks for your service and your examples to our family. To Elder Rigg...Remember what we told you about going home!!! Continue to read and pray and stay strong in the Church! We sure will miss you!

I Scream You Scream We All Scream for Ice Cream

You gotta love the extras that come on DVDs these days. Justice found this recipe on a Dora DVD and wouldn't let the day past without us trying it. It turned out really fun! Yeah-- when you have all the ingredients to make your kids happy. LOVE it!
Here's in case, you'd like to try it too.
Ice Cream in Two Bags
Fun and quick summertime treat (from NickJr.com)
• ¾ cup milk (or half and half)
• 4 tsp sugar
• ¼ tsp vanilla extract
• handful of chocolate chips, cut fruit, Hershey syrup, or candies
• ½ cup course kosher salt
• 4 cups ice cubes
• Ice cream cones (each bag makes 2 cones)
• Resealable bags: 1 quart and 1 gallon
• Heavy-duty tape
1. Combine the milk, sugar, vanilla, and flavor ingredients in the 1 quart bag, seal tightly and tape shut. Put this bag into the 1 gallon bag. Fill the bag with ice and sprinkle with salt. Seal this bag completely and tape shut.
2.  Toss bag back and forth or shake for 5 minutes (will want to wear oven mitts or gloves).
3. Cut open the large bag, remove the ice cream bag and wipe it dry. [This is important or your ice cream will taste salty- YUCK!] Snip off a corner of the bag and pipe into two ice cream cones or bowl. Top with sprinkles, nuts, or other toppings.
*Replace milk, sugar, and vanilla with pineapple, mango, or orange juice or lemonade for quick and tasty sorbet.
